VINIFICATION PROCESS:
hand harvesting, maceration for 4-6 hours, cooling to a temperature of 6 C0 through a heat exchanger, clarification and decanting, controlled fermentation for 30 days at 16 °C.
MATURATION:
6 months in a stainless steel container, 1-2 months in a bottle
CHARACTERISTICS:
The elegant green-yellow color indicates the high quality of the wine. The scent has a fruity character, and it emphasizes tropical fruits such as melon and pineapple and stone fruit peach with notes of vanilla. The wine is dry, harmonious, full, creamy, with excellent body structure. Pleasant acids give a subtle freshness to this rich, dense wine whose finish lasts for a very long time with a feeling of comfort and satisfaction.
FOOD AND SERVING:
Chardonnay is recommended with soft cheeses such as Brie and Camembert, and with Caesar salad or pesto genevese pasta, seafood dishes, pear and apple pies and cakes. Serve at a temperature of 10-12 °C.
