VINIFICATION PROCESS:
Domano is the first Herzegovinian sparkling wine produced using the classic method of fermentation in bottles, from grapes of the Žilavka variety. Domano is the pride of our winery. Grapes for sparkling wine are harvested earlier than for classic wine, and the goal is to obtain an optimal ratio of acids and sugars, with acids higher than 7.5 and sugars no higher than 18 degrees. Wine is made from such grapes by primary fermentation. Such wine is not pleasant to drink, and sparkling wine is made from it. Secondary fermentation, which creates sparkling wine, takes place in the bottle. In addition to the wine that was created through primary fermentation, yeasts and circulation liquor, which is a type of sugar syrup, are added to the bottle, and the bottle is aged horizontally in the cellar. During secondary fermentation, carbon dioxide is trapped in the bottle, which leads to the formation of bubbles. Sparkling wine ages up to 3 years on yeasts and lees in the bottle. After maturation in the bottle, it is necessary to remove all the sediment, so the bottles are placed on shelves where they are turned upside down at an angle of 450 and are shaken day by day with the aim of collecting the sediment in the neck of the bottle. Then the process of disgorging follows, during which the neck of the bottle is frozen and the resulting block of ice together with the sediment is removed by uncorking. A little expedient liqueur is added to the bottle, after which it is closed with a cork, mesh wire and a capsule.
MATURATION:
excellent sparkling wine of excellent purity and freshness, which makes it light and pleasant in the glass. On the nose, it opens with floral aromas and light smoke, and later the bouquet is rounded off with grapefruit and lemon citrus. The taste is extremely mineral, luxurious, strong.
CHARACTERISTICS:
It is greenish in color with a yellowish reflection. The deep and refined taste of Žilavka is dominated by citrus fruits such as grapefruit and lemon, followed by hints of vineyard peach and refined minerality. A fresh, elegant, well-structured wine that lingers in the mouth for a long time. It is in very good condition. Strong, potent and rich wine for connoisseurs.
FOOD AND SERVING:
best served with egg omelette, dishes with mushrooms, pasta, oysters, caviar, lobster and with strawberries with whipped cream. Serve at 6-10 °C.
